Why every chart disagrees
Pan capacities come from manufacturers. Cake servings come from the Wilton chart. Frosting amounts come from… nowhere — they're kitchen folklore, remembered and re-published until the numbers drifted apart. So instead of adding a sixth conflicting table to the internet, we compute it: a cake's frosting is surface area × coat thickness, and both of those are knowable. The arithmetic for a 9″ two-layer at the standard ¼″ coat comes to 4¼ cups — and lands inside the folk range, which is exactly what you'd hope: the folklore was remembering real cakes, just without showing its work.
The three surfaces (and the one people forget)
- The top — one pan-footprint of frosting. On the 9″ example: 1.10 cups.
- The filling — one more footprint per gap between layers (1.10 cups here). Torte the layers (split them horizontally) and each new gap adds another.
- The sides — the one people forget, and usually the biggest: 1.96 cups on this cake, 47% of the total. Side area grows with every layer you stack, which is why a three-layer cake needs so much more than half again a two-layer.
Decorating is a fourth surface in disguise: borders, rosettes and swirls are frosting with nowhere to spread, and a piped border can swallow a cup by itself. The calculator's piping allowance adds 25% for it.

Coat thickness is the biggest dial
The same 9″ two-layer cake, at the three coat styles — computed, so the ratios are exact where the folk charts hand-wave:

Fondant cakes still take the thin coat underneath — fondant needs buttercream to stick to. Cupcakes live on the same dial in disguise: a piped swirl is roughly three flat coats stacked high, which is why two dozen swirled cupcakes take 6¼ cups.
From cups to batches of your recipe
Frosting recipes don't agree on what "one batch" means any more than the charts agree on amounts — yields run from 2½ cups to 6. So convert deliberately: find your recipe's stated yield, and divide. A typical American buttercream built on 2 sticks of butter yields about 2.5–3 cups, so the 4¼ cups example cake means 2 batches — call it 4 sticks of butter on the shopping list (the butter converter turns that into grams or cups). Rather than mixing batches back-to-back, scale the recipe once with the recipe scaler — buttercream scales cleanly, and one 2× mix beats two 1× cleanups.
One planning rule covers every uncertainty in this article: round up, always. Leftover buttercream freezes for a month and re-whips like new; running out with one bare side showing does not have a good ending.
