Where this number comes from
Most of our weights are the King Arthur Baking chart figure, unchanged. This one is not, and it is worth saying why: Physical constant: water is 1.00 g/ml, so a 236.588 ml cup weighs 236.6 g. King Arthur's 227 g comes from reading 8 fl oz as 8 weight oz.
